Raw Cacao Truffles

Raw desserts are absolutely delightful, offering a rich texture and deep flavor. These Raw Cacao Truffles are no exception—you only need one, maybe two, to satisfy any chocolate craving. They’re always a hit! Surprisingly simple to make, the only real effort lies in rolling the truffles, but you’ll get the hang of it quickly. For the best results, let them chill and firm up in the fridge before indulging.

Raw Cacao Truffles, yields 25

Ingredients:

  • 1/2 cup coconut cream, (i.e. Artisana brand)
  • 3 tablespoon coconut oil, melted
  • 1/2 cup water, warmed
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups raw Cacao powder (+ an additional 1/4 cup to roll finished product)
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon cinnamon powder
  • pinch cayenne & cardamom

In a food processor, blend the coconut cream with the wet ingredients until smooth. Add the sifted cacao powder, salt, and spices, and pulse until combined. Transfer the mixture to the fridge to firm up. Once firm, use a metal spoon to scoop and roll the mixture into 25 truffle balls. Roll each ball in cacao powder to coat, then store them in the fridge.

Tip: Use a metal spoon and work quickly when rolling the truffles, as the warmth of your hands can melt them.

Variations: Get creative with this base recipe by experimenting with flavors like spirulina, fennel, rosemary, citrus zest, mint, almond extract, cacao nibs, goji berries, and more.
