Raw Strawberry Pie!

I hosted a soirée on Sunday June 9th – Celebrating Friendship!

It was a potluck so everyone brought a dish or beverage. Kenny brought an abundance of cut tropical flowers from his land in Huelo – pieces of art.

I made a few dishes, the biggest hit – 2 raw strawberry pies.

Most raw desserts are delicious, they are easy to make and tastier than most traditional desserts, except for my brother’s Flourless Chocolate Cake and David’s Chocolate Cake with vinegar (whom I both love dearly and miss spending time.)

RAWSOME STRAWBERRY PIE RECIPE – Easy! Yields 1 pie

 

Crust:

  • 3/4 cup Pecans or Walnuts
  • 1/4 cup desiccated Coconut
  • 1 cup Medjool Dates, pitted

Filling:

  • 2 cups Strawberries, fresh
  • 1 cup Cashews, raw
  • 1 teaspoon Vanilla Extract
  • 1/2 cup local Honey
  • pinch Sea Salt
  • 1 cup Organic Coconut Oil, melted but not hot

Instructions:

For the crust:
  1. In a food processor, first grind the nuts until fine, then add coconut and pulse a few times, then add pitted dates and pulse until a slightly sticky uniform chunky mass forms – Press into the bottom of a 9 inch pie pan, building up the sides slightly.

For the filling:

  1. In a high powered blender, first grind the cashews, by pulsing, then add the rest of the ingredients – Blend until smooth and creamy
  2. Pour filling into the prepared crust and refrigerate for 3 hours.

Easy as pie!
